THM Menu Sample One day at a time - Thursday

Hello everybody!  And so the series for THM one day at a time continues.
Remember: The Snacks are optional if you don't have "enough hours in your day" to get all these meals in... don't worry... skip 1 or both snacks... Just remember to never let more than 4 hours go without food. You should always wait at least 2 1/2 hours between each feeding (no munching in between! even if you are not switching fuels! Yes.... again... I say it... even if you are NOT switching fuels) Now... if you are switching fuels you should wait AT LEAST the 3 full hours.

This week I am sharing the SAHM eddition... Next week we can work together on a "on the go" menu.


Thursday

E Breakfast:
  •  French Toast and 1 container of Oikos Triple Zero Greek Yogurt.

S Snack:
  • 1  Hard Boiled egg, celery stalks and a bit of mayo.

  FP Lunch:
  • A big salad prepared with lots of greens, extra lean deli turkey slices, some fat free or 1% cottage cheese (I use the cottage cheese almost instead of the dressing), a couple slices of tomatoes, onions and 1 light rye wasa cracker.

S Snack:
  • Handful of Almonds and some slices of deli meat

Dinner: (FP, E or S)

  • Mexican Chicken and Zucchini Dish (click for recipe) I am very proud of this recipe, it got the Admins attention on the FB groups, so the sisters used my recipe, got a photographer and took a pic of it and share it with the world! I hope you enjoy it too!
  • For Dessert I recommend a delicious Strawberry Shortcake (click for recipe). If you choose an "E" or FP version of the Mexican Dish and you want to keep it that way, use 1 capful of Fat Free Reddi Whip instead of Heavy whipping cream to go on top of your cake.

Note: This menu that I've put together can NEVER replace the knowledge that comes from reading the book and applying the principles yourself... You will eventually want to be FREE and put together your own food combinations and meals, this is an aid that will allow you to "see" what a THM menu looks like IRL but reading the book is crucial to succeed on the plan. Every good thing is worth the extra work. My tip... is get the book and start reading the chapters about the different types of Settings (S, E, FP, S helpers and Crossovers), start applying every new principle you learn and keep going. I do not charge for sharing my menus and meals, The authors of the book have worked too hard on creating this plan and their own name. Those who use the THM name to sell menus and meal plans are doing so in full knowledge that they are taking advantage of someone else's work. Hopefully they will re-consider and stop. Make sure you do not support those who do so.

THM Menu One Day at a Time - Wednesday

Hello everybody! This week I've been sharing with you day by day my "typical menus" on THM.

Remember: The Snacks are optional if you don't have "enough hours in your day" to get all these meals in... don't worry... skip 1 or both snacks... Yes.... again... I say it... even if you are NOT switching fuels) Now... if you are switching fuels you should wait AT LEAST the 3 full hours.

Wednesday
S Breakfast:
  •  Egg Breakfast Tacos: 2-3 scrambled eggs mixed with 2 tbsp. of no added sugar salsa (I use Pace) topped with shredded cheddar cheese. For the tortillas I use low carb whole wheat tortillas. Keep it to 6 grams or less NET carbs (carbs-fiber=net carbs) for low carb store bought products like this one.

E (or FP) Snack: 
  • low fat cottage cheese (2% or less) with fruit of choice: If you use berries this would be an FP, you can use up to 1 cup of most berries, except for blueberries, you have to keep it to 1/2 cup to stay in FP territory. If you use any other fruits this would be an "E", make sure you stay within the 20-45 carb range. (Don't abuse the fruit!)

S Lunch:

S Snack:
  • Celery sticks with peanut butter you can add a couple of slices of deli meat for extra protein.

Dinner: (S)

  • Meatloaf and "Mashed Potatoes": I make my meatloaf by mixing Grassfed Beef (about 2 pounds) with chopped mushrooms, slightly cooked bacon/onions/green bell peppers, season with salt and pepper, add two eggs and a little bit of half and half and ground golden flaxseed instead of breadcrumbs. Cook in the oven at 450 for about 45 minutes. The Mashed Potatoes is just mashed cooked cauliflower with butter/cream cheese/cheddar cheese, salt and garlic powder.

If you still feel like having dessert I would choose something not as heavy... because your dinner was pretty "loaded" ... a couple of dark chocolate squares are always a great choice.

I love using my Ninja Processor for my mashed potatoes... the result is so smooth!!!

THM Tip of the week - Grams of Sugar vs Added Sugar

Hello everybody, last week I started a "Paloma's THM Tip of the Week" for my blog...

If you have no clue what THM is ... Well... you have to check this out

If you are already on THM or lurking and full of questions... I hope my tips will help you... I want you to stay encouraged and motivated realizing that this plan is doable!

 So... here we go... this is the 2nd. Tip I share... please leave comments, suggestions or questions ... I'd love to hear from you!




Get familiar with labels

Food! We love it! And many times we eat it without even looking at the label on the packaging which gives us such important information. Many others of us WILL indeed look at the label and only be concerned about the "calories"... those that are a little more thorough might look at the fat content or "Sodium" (many times wondering if that's too high or just enough). Trim Healthy Mama plan we have such freedom that calorie counting is no longer needed (I do it once in a while just because I am obsessive like that) but in our plan "Ingredients Trump Numbers" (if you join the FB group you will see that phrase there often) ... We care more about the ingredients we eat and their categories (there are some things that we just do not mix).... but KNOWING how the labels work will help you a lot and will save you from a lot of confusion...


See that label? Let's study it together, we will not get in depth but I will show you two very important things that you have to notice... On Trim Healthy Mama we focus A LOT on the ingredients... Sugar (also known as glucose, corn syrup, dextrose, honey, agave nectar, evaporated cane juice, cane juice, juice concentrate, fructose... and many more) is not allowed on the THM plan, actually it will be easier for me to tell you the sweeteners that are on plan: Stevia (natural and doesn't spike your glucose levels) -Trim Healthy Mama has great sweeteners- and some natural sugar alcohols like Erythritol and Xylitol - like this or this  

BUT... sugar (even if it claims to be natural, organic, lower GI -like agave or coconut sugar-) is NOT on plan.

Don't worry... you can still enjoy lots of sweets... but your palate might in fact need some adjusting to the sweeteners, as you flush out the sugar from your system.

Anyway... So... back to that label! See the ingredients? Let's try a little exercise... Do you see any sugar in the Ingredients list? The LIST is at the bottom... right below that little chart with numbers and percentages.... look at the pic and check please, this will help you.... No sugar, right? That means this specific product (Oikos Triple Zero Yogurt) does NOT contain any added sugar... Most mamas start jumping up and down of joy when they see that it's actually sweetened with STEVIA LEAF EXTRACT!... but then... uh... their eyes catch something while they jump... as they look a little higher on that same label they see the word "Sugar" .... and when they see that it says "7 grams" they want to faint! If they already ate some they almost want to "spit it out" like it was poison (which... well... let's be honest... sugar IS like a poison) and they get troubled, confused and frustrated... But... let me tell you something: 

 Jump and dance away mama! You're good to go

Your brain is not tricking you, the food industry is not tricking you (at least not in this specific case), this is not as confusing as you might think... the "Sugar Grams" you see there are actually naturally occurring sugars from the dairy in your yogurt... THERE IS NO added sugar in this product and ... of course we all love a lower number in the grams of sugar but thankfully the fermentation process in a yogurt helps lower the impact on your sugar level... (this happens specifically with fermented products like Kefir and Greek Yogurt which are both allowed on plan, make sure you buy them 0% and plain! the only allowed "flavored" yogurt we've found so far to be on plan is the Triple Zero Oikos because it's the only one sweetened with stevia).

Now... let's just do another quick exercise just to make sure we got this! Let's do it with an "easier" product (dairy can be higher in natural occurring sugars so it can get a bit harder to figure out) but let's practice with a product we would assume there would be no traces of "sugar" in it...

Let's go with something most of us love and that you can enjoy on the THM plan... UNSWEETENED PEANUT BUTTER!

 You can buy the most affordable kind like:

Smucker's Natural Creamy Peanut Butter or Kirkland Natural Peanut Butter

If you can afford it get the organic/non gmo kinds like: this or this.

Let's look at a label:



I think you now know where to look first, right? Ingredients! What does it say? Basically Peanuts and Salt!

Now, let's look at the chart on the left, the nutrition facts:

Sugars: 2 grams...

With the knowledge you now have... is this product ON plan?

mmmmm

need another second?

.....

If you answer was YES! You are correct! On THM we can eat this product in an S setting, the "S" stands for "satisfying" where FAT is the FUEL. We avoid grains, starches (basically we keep our carbs low) in an S setting... so you would be MORE THAN SAFE eating this product in an S setting... Your carbs are 7 grams, then you remove the 3 grams of fiber and you end up with 4 grams of net carbs in 1 serving of this peanut butter (10 grams of carbs is the limit for an "S")...

"But wait... what happened with the sugar? I thought it wasn't allowed!"

You are right! Sugar is off plan... But... there is NO ADDED sugar here... as long as "sugar" (or any of its nicknames) is NOT listed on the ingredients you are good to go! (well... of course there are other off plan ingredients but we're just talking about sugar right now). Grams of sugar in the nutritional facts are good to know but they do NOT disqualify a product from the plan...

Keep checking your ingredients... Stay alert! Don't let that sugar sneak up on you!

Other favorite sweeteners on plan are:






(Update after publishing) Beware of Truvia Baking blend... Yes it's cheaper but it's because it's mixed with sugar. It is NOT on plan, stay away from Stevia in the raw as well, it's NOT only stevia and it's NOT on plan. We have to check the labels of everything... Grocery shopping actually makes me a bit angry to see how many "innocent looking" items have sugar in them! You can even go to your pantry and check your container of SALT and you will very likely find DEXTROSE in the ingredients.

Rehearse, Practice, Wonder, Question - THM Tip!

Hello friends! How are you doing? I know many of you are just joining (or thinking about it) Trim Healthy Mama... I know a few friends that have asked me about this amazing plan, they all get encouraged to join when they hear about the amounts of foods you can eat, the fact that you can have butter with your veggies or that you can eat a nice steak and feel no regret! But as soon as they hear something like "S, E or FP" I can see glossy eyes! Many get lost there...

My beautiful oldest daughter is bright as can be, she is 6 years old and very smart... But she often complains when we do something "new" for school (I home-school)... She is a perfectionist and wants to avoid making mistakes at all costs! So if I introduce a "new word" to her spelling words she gets frustrated and says:

- "but I don't know that one!" ... and I answer:

- " Well... of course... of course you don't know that one! Isn't that exciting? you are learning something new! In the beginning it's going to seem odd, weird and sometimes even impossible! But isn't it going to be great when you get it? and then it  just be part of your well known words. Would you rather I repeat day after day: *cat, hat, pat, bat*? No, right? I know you know those! Those are now easy! But at some point they weren't!"

What does that have to do with anything? I know you know what I am trying to tell you! Trim Healthy Mama is a new thing for you! It's not even a "familiar word" but... how awesome is that? It's an opportunity for you to learn something new (to you)... and not only something new... it's something good and something that will soon become part of who you are and you will manage to see it as something easy!

Of course you DON'T HAVE TO learn this plan... It's not indispensable, you could just continue your life without it... I often see posts of ladies that want to be "convinced" that this plan works... Day after day I see ladies on the FB groups trying to explain why this is so good for others! Like trying to convince a kid to eat his veggies! So I am not going to try to convince you! You can see all the amazing testimonies day after day on Facebook ... We are not children anymore... I am responsible for my health and I have my own struggles... Staying or not staying, joining or not joining is completely each individual's personal choice and decision to make. Others get discouraged when the scale doesn't move (been there! TOTALLY, way too often) and when we are down we want to be convinced to stay on plan! Thankfully there are wonderful, encouraging ladies on plan that will try to do that work and convince others... but honestly... if someone has made up their mind to "quit" it's almost unfair to put that "burden" on others to fight for them and somehow try to keep them doing what's good for their health!

 So... I decided to start this new "thing" on my blog and it's called "Paloma's THM Tip of the Week".

Here goes this week's Tip




Read the book and...

Spell it!

Just like with my daughter... whenever there is a new word she freezes and thinks she can not do it! Just yesterday she wanted to write a sentence and use the word "suddenly" and the first thing she did was come and ask me how to write it... I could just answer! It's easier not only for her but also for me... But... I know for a fact that I will not be helping her if every time she has a question I immediately jump and tell her the answer without having her try to think about it for a little bit....

I said: "I know you never write that word but I also know you've seen it before... you know how the letters work... so sound it and you tell me"

She immediately said: "Ok... S-U-D ....." and ... she spelled the whole word she thought she didn't know.

Whenever you go to the FB group and want to ask a question... go ahead! Questions are not only welcome but also encouraged... but if you take my tip... TRUST ME ... you'll be rehearsing those concepts that you think "don't make much sense" but you've ALREADY SEEN THEM in the book, etc... The knowledge is there! Try to apply them for yourself before you ask and you might be pleasantly surprised and actually excited to realize you know more than you give yourself credit for....

Of course ... the first thing is I am assuming you already READ THE BOOK ...

Don't get me wrong... I am not saying don't ask! I am the very first one to help answer a question whenever there's a doubt on the group... I am also the first one to ask if I really can't figure out something! You shouldn't do this by yourself when there are so many wonderful people out there willing to help you... BUT... before you ask someone else... ask yourself if you can "answer your own question" and when you come up with an answer... even if it's a wrong one... then share with the group ... something like "hey... I was wondering if I could have rice with my *S* meal... I think I can't because rice is a grain and it belongs in the *E* meals but I am not sure and I want to confirm"

What a wonderful thing that is! To see mamas trying to apply their knowledge, willing to make mistakes, being teachable because they take their health that seriously.

 Also... I've seen that one of the administrators of the group (Michelle) sometimes challenges the members to figure out what kind of meal she is eating, she posts a picture and everyone chimes in with their response... many get it right, many get it wrong but they are ALL PRACTICING their knowledge and willing to even make a mistake! guess what? Most of the things I know BEST are the result of a mistake I once made and once it got corrected I never got it wrong again!

See? Try for yourself! Make an extra effort... go the extra mile... it will make all of the THM concepts become a part of you THAT MUCH FASTER.

Christmas Cookies - Do you have the right baking sheets?

Hello everybody! Welcome to another post here at The Coffee Shop! It is being harder than I thought to get back into blogging! but we must do it! So... have you already planned some Christmas cookie baking? These are the days when Cookie Exchange Parties take place... I used to have this sort of tradition with a friend in Wisconsin, we would get together and bake cookies... I also tried to bake with hubby's aunts... although... for some reason we didn't do much baking together the last year I was there... It's just a busy time for everybody! This time, living now in Texas... I have already been invited to a cookie exchange.... we must all bring four dozens of cookies and share with everyone (along with the recipe) ... sounds cool and fun! But I know I am going to miss baking with my friend from Wisconsin, Ashley, so we are both going to try to bake this Thursday, so we at least get to bake the same day, even if we're far away.

So... now, that we approach those dates... I'll be sharing some cookie recipes... But first I wanted to know if you have the right baking sheets... You must make sure you have aluminum cookie sheets and baking pans/sheets (avoid non-stick sheets because aluminum bakes more evenly as heat is distributed better throughout the sheet/pan). Cookie sheets are different from baking sheets, cookie sheets do NOT have rolled edges like baking sheets do, they are perfect for cookies because of the larger surface area but of course you can't roast on them because they can't keep any juices in. Just make sure to line your sheets/pans with parchment paper or a French nonstick baking mat to avoid your baked goods to have any metallic taste from the overheated aluminum.

I thought I would share a video that I found from our friends of America's Test Kitchen (now Cooks' Country)... I really trust them, their advice and recipes... so watch it and hopefully you'll find it helpful! Not only for cookie baking... but also for other dishes...

Share your Holiday Disasters AND get unplugged!

Hi everyone! Today I am asking everyone to share about their "Holiday Disasters" on my Facebook Page. I hope I get good stories, things we can now all laugh about and also to be encouraged! As you know I've been sharing tips and ideas to make the Thanksgiving Dinner an enjoyable event, not only for the guests but for the host/hostess as well! This doesn't have to be something you just want to "get it over with" but a special time to show your loved ones how special they are... not through perfection, but through YOUR best (not a Magazine's Best), through your smile (not faked, but a relaxed, sincere one), through your ability to have fellowship with them.

 Another tip I am going to share... and ... forgive me if it seems "too much" but... let's make a deal... do not discard it immediately, bare with me...

ehem... Here I go

"Turn off the TV and... avoid the cell phone"

 And this I say with my deepest, sincerest love and respect... but... why do we have to stare at a screen all the time? You can watch that show (or football game) maybe online, maybe later (DVR), you can send that text some other time... But we never have the certainty we will all have another Thanksgiving together... And I don't mean this to be a gloomy post... but I just want to encourage, all of us, to treasure each moment when you get to spend time with the family and, if you have little ones, it's a great opportunity to teach them what's really valuable! We can turn our "screens" off for PEOPLE, people are important! Family is important! If the Turkey is dry, if the cookies are flat, if the Pumpkin pie is still jiggly and the pecans burnt... that doesn't matter... everything will end up in the toilet! (sorry about the expression) but it's true! Laugh about it! It's great to have a perfect meal! But life wouldn't be as enjoyable if everything was perfect! We wouldn't have funny stories to share if nothing went wrong once in a while! Take a picture of your burnt cookies, your mismatched napkins, your chipped gravy boat... and laugh about it! Turn it into a story to talk about after dinner!

My first time Baking Christmas Cookies... I didn't add peanut butter to Peanut butter cookies - LOL!

Don't let all the guys go watch football while all the girls talk at the table about what could've gone better ... it's a great opportunity for everyone to visit! Make a Thanksgiving Tree or just have everyone write in a piece of paper what they're thankful for this year so then you can all read about it later, turn it into a game by mixing the "thankful notes" and trying to guess who wrote what!

This is such a great opportunity to create more moments to be thankful for!

I got good hugs this Thanksgiving. I don't think those watching the football game have as many good memories as I do!

Why you want to Carve the Turkey ahead of time and How to Do it!

 Hi Everybody! It's Monday! it's a cold day here in Texas which I am really enjoying because for most part of the year we get thick/humid/hot climate! I am happy the sky is blue, sunny and the breeze is cold! It's wonderful!

So... Going through my Thanksgiving Menu I already shared with you the recipes for the easy, stress-free appetizers:

Deviled Eggs and Stuffed Celery

I don't need to share to you the "recipe" for a "veggie tray" and dip, right? Again! Thinking of being "practical, efficient and stress-free" I suggest you just do your veggie chopping the previous day (unless you're buying the tray already prepared) and have all the vegetables individually refrigerated in ziploc bags.

Now... Going to our "Entree" section in our Menu... Let's begin with the Turkey... I already gave you a chart to know the "time to bake" per pound (both stuffed and unstuffed) here

Now it's time for me to just make some quick suggestions... First of all, if you use an oven bag (which I highly recommend) just know that the skin of the turkey won't be crispy but it can still have some color to it! How? When you prepare your turkey (with whatever seasonings you use) make sure you add paprika to the mix, and it will give you a beautiful, dark golden color. Especially if you want the big, whole turkey on your Thanksgiving Table for beautiful pictures. BUT here is where my biggest suggestion comes:



Carve the turkey ahead of time! Especially if this is your first time Hosting and/or you want to take some stress off of your Thanksgiving Dinner!

1. Let the turkey rest for at least 30 minutes right after taking it out of the oven before doing any kind of cut to it. If you get a knife in it, all the juices will just drain out of the turkey and the meat will not be as moist.

2. Once it's rested, Carve your turkey ahead of time and separate dark from white meat! I know you want to take pictures of your beautiful turkey at the Thanksgiving Table, but it might not be too practical to let your guests grab a piece for themselves or if you want to carve it in front of everybody at the table you'll just add stress to the process, you'll worry about the tablecloth even! you will have the pressure of everybody watching your every move when carving, and it might not even be as safe! It's better if you have a nice, empty surface in your kitchen, where you can feel free to move! and it won't be as messy! Plus you get the chances of getting better use of ALL THE MEAT in that turkey!

What you will need to carve that turkey:

1. A great carving knife! You can use a sharp boning knife or get a good electric knife which will be very useful! like this one

2. A carving fork like this one

3. A good, big enough, cutting board.

4. Confidence! (Don't be afraid of that bird! You can do it! and again, it doesn't have to be "perfect") especially because, you're not doing it in front of everybody!

So here are the steps to carve a turkey:

How to carve a turkey: step by step! (you can practice with a roasted chicken ahead of time)

Note: -it seems like a lot but I've just gone into big detail to make it very clear- it's actually an easy task! trust me, all you basically have to do is remove the legs, remove the meat from them and keep warm, remove the breast halves from the rib cage, bias cut all the meat into serving size portions and you're done. Here are the steps though:

  • Place the turkey on the cutting board or a platter, breast side up, with the legs facing away from you. Steady it with the carving fork in your guide hand.
  • Cut through the skin that connects one of the legs to the carcass, cutting as close to the leg as possible. (do this for both legs) - Remove the skin from the turkey if desired, that's what I do, especially when using an oven bag to bake it -
  • Set down the knife and pull the leg to make some space from the bird until the ball joint that connects it to the carcass pops (Use a towel to protect your hands if the turkey is too hot.) Once the joint is exposed use a boning knife to cut right through it and easily remove the leg. (do this for both legs)
  • Lay the leg on the board, with the knee facing you, and feel for the joint connecting the drumstick bone and the thigh bone. Once you feel the joint just Place the knife blade directly on it and cut straight through to the board. (There shouldn't be much or any resistance. If you there is, the blade is on the bone, not the joint. Feel for the joint again and adjust the position of the blade accordingly.) (do this for both legs)
  • With your guide hand (left, if you are right handed), hold a drumstick vertically by the end of the bone (the ankle) and let it the other side firmly rest on the cutting board. Then use your knife to cut from the the side you're holding, right to the bottom to remove the meat (do this all around the bone, as close to the bone as possible) -do this with both drumsticks-
  • Once you have big pieces of meat you've removed from the drumsticks, slice them into serving-size pieces (horizontally)
  • Now Lay a thigh on the cutting board, (if you left the skin on, the thigh should be with skin side down) and steady it with the carving fork in your guide hand. Cut along both sides of the bone, from one end to the other (do this with both thighs)
  • Rotate the thigh and just slide your knife between the bone and the rest of the meat, pulling the bone out and removing it completely. -same thing with the other thigh-
  • Now that you have removed all the meat from the thigh, bias-cut it into serving-size slices.
  •  Grip a wing with your guide hand and pull it away from the carcass, just enogh so you can see where it is attached.
  •  Direct the tip of the knife until you feel right between the ball joint of the wing and the socket.
  • Place all that dark meat in a crock pot in low or inside a warm oven covered with aluminum foil to keep warm. You can also use a big skillet with a tight lid in very low heat and gently stir occasionally. - add a tiny little bit -almost nothing- of liquid if necessary-
  • Cut all the way through the joint, through any meat and/or skin, and remove the wing from the carcass.
  • Rotate the turkey so that the other wing is facing your guide hand. Repeat previous steps to remove it. 
  • Now you just have the breast! Steady the side of the breast you’re not carving with the carving fork in your guide hand.
  •  Make a long, thin cut along the breastbone, in the center top of the breast.
  •  Using the tip of the knife, cut down right along one side of the rib cage, then lay down the carving fork and use your guide hand to push or pull the breast half gently away from the ribs as you cut.
  •  Let the knife blade ride the rib cage straight down to the socket where the wing was attached. Cut until the breast half is completely removed. -Do the same thing for the other breast half. Use your carving fork on the rib cage/breastbone to steady the other half-
  •  Lay the breast halves on the cutting board, skin side up (or what would've had the skin side up), and bias-cut it into serving-size slices.
  •  Place white separate crock pot/pan in the oven and/or skillet to keep warm until it's time to serve.
Make sure you plan ahead of time, use the baking/time chart here to know what time you want the turkey in the oven, if your Thanksgiving Dinner for example will be at 4 p.m. and you have a 20 pound unstuffed bird, you want to place the turkey in the oven at 8:30 or 9 a.m. -the latest- This will give you 5 1/2 hours (2:30 to 3:00 p.m.) to bake the Turkey, plus 30 minutes to let it rest, plus time to carve and keep warm. If you are using an Oven Bag, with the same scenario (Unstuffed 20 pound bird) then you can get it in the oven at 11 or 11:30 a.m. at a temperature of 350F, to bake for about 3 1/2 hours, give it time to rest, carve, keep warm.

If you have a "buffet style kind of dinner" you can have the guests serve their choice of dark/white meat directly from the crock pots, your line will go very fast because everything is "ready and cut" for them. If you're keeping the meat warm in the oven, just get it out and let themselves serve from the pans (warn them it's all hot!) Or, if you want to set it all at your Thanksgiving Table, transfer the meat (separate white and dark) to warm dishes with a lid that you can display in the center of your table.

Nobody will have to mess up with cutting, you'll avoid the stress of "carving in the middle of a table with all the guests around you" and everybody will focus on enjoying! Plus, you won't deal with bones at the table and you'll get better use of all the meat!

If you have a helpful husband like I do, make sure to keep him around! (LOL!) or make a deal with him "previous" to the event, so you don't have to be "telling him what to do" ... My husband helped me keep my trash can empty, clean surfaces after me, get rid of bones, and keep paper towel handy and ready for me to use!

I hope you'll host! I really do! And I hope that if you've been hosting Thanksgiving for years but it's always been stressful and something you just dread and want to get over with, my tips will help you enjoy it this time!

Tuesday of Quotes - Entertaining vs Hospitality!

Hello dear friends! How are you doing? It's been busy here! I've been focusing a lot on my exercise/dieting and just trying to have my priorities in order... I often say God is first, my family is second... but... how does that reflect on my actions? Is it really showing? I think many times it isn't ... and I end up doing it all backwards! I'll continue to blog! I really love it! It's a great way for me to express myself and connect with others! In this time and day when communication seems to be at the reach of everyone and it's just impossible to not be in touch with the world... it seems we're actually losing really contact and face to face relationships... but I won't talk about that for now... I think that's a topic many have already discussed! I guess what I am saying is: Be patient if it takes me a bit to get back to you! You know me by now I hope and know that I love commenting on blogs and replying to your comments and posts! It'll just take me a bit longer, ok?

Now... to my topic of the day... On Tuesdays I usually post Famous or Interesting Quotes... Today won't be an exception... But since I've been talking about Thanksgiving and how to make it enjoyable even for the host/hostess I thought my quotes would be directed to hospitality! Remember... Being hospitable is not the same as being an "Entertainer" ... My friend, and pastor's wife, Gay shared once: "Entertaining! Just the word sounds intimidating! it's a big responsibility to think of keeping others entertained! And makes you feel stressed out" ... Very true! But being hospitable... is out of love, it's warm and caring! It's doing your best out of caring for those that come into your home, sharing what you have with others, in a peaceful environment and atmosphere! I aim for the second! So if you are looking for advice on how to be a good entertainer... you can find that on Martha Stewart's page! She is really great! isn't she? And I don't think there's anything wrong with it... But being Hospitable... now that's something I strive for! I hope others can say about me that they felt welcome in my home, that they felt comfortable and cared for!  I hope they feel like they can take their shoes off because it's like their own home and not because they'll fear ruining my carpet! If you've been reading my previous posts on my "Thanksgiving series" you'll see that I talk a lot about being thankful and attitude... hopefully this Thanksgiving you'll work towards being hospitable and not worry about being the best entertainer... It will take a burden off your shoulders and I am sure EVERYONE, including YOU, will enjoy the holidays that much more!

Thanksgiving Made Simple - Part II

Hello everybody! First of all let me tell you that I've been really busy, just with great stuff, with my girls, friends, Bible Study, etc... Yesterday we even went to a Pumpkin Patch/Farm ... it's Texas so it's more like a "Texan Ranch" ... I miss Wisconsin all the time but fall... well... fall makes me even more nostalgic! Yesterday we reached 90 degrees outside with over 90% humidity! So you can imagine it didn't have a "Fall" feel! but we still had lots of fun!







 So, that was that... Now... I want to remind you of our Coffee Friday Party tomorrow! We are in for a treat!  6. Be Thankful! - Ok... I know that was my first point in the previous "Thanksgiving Post" but I feel I can never say this enough (even for myself)! Focus on what you're thankful for and have the right attitude about it! Instead of worrying about the dishes to wash, thank God for having food that allows you to have those dirty dishes, Thank Him for the running water in your sink! Don't take it for granted! Thank God for the kitchen you have where you can prepare a meal instead of focusing on the "counters you'd love to replace" or stress over the "appliances you'd love to have" ... I find it very interesting that the more people have the more stressed and even depressed they seem to be... we're not "entitled" to all these blessings! God is Good... and yes, bad things happen, I don't know the exact situation and circumstances you're going through... but don't blame Him for the bad... we live in a corrupted world! He is not the source of evil, death and disease, but He is good and even in a bad world, we can enjoy all kinds of Blessings because of Him! ... when we go through something like a "party or holiday" it's weird that instead of enjoying it, it seems to cause us "pain"... just have fun with it! do your best.. and like Beth Moore would say (I got this from her Bible Study "on James") "Do only what Blesses and not what Burdens" ... so true! Don't try to live up to Martha Stewart's standards... just try to enjoy your family, enjoy food, enjoy the fellowship and His goodness.

7. Make Room! - Start getting things organized in your fridge/freezer ahead of time... I don't know about you but I have a crazy, weird refrigerator! LOL! ... I live in an apartment so I don't have an extra freezer or anything to store! So... I know I'll have to keep my fridge pretty empty and organized so I can have room to store leftovers and also for the things I am making ahead of time that will need to be refrigerated (pies, sauces, etc.) ... If that's your case, make sure you don't go "grocery shopping" right before Thanksgiving and then you find out you don't have room to store prepared meals, etc.

8. Don't reinvent the wheel - I'd recommend you to not try new recipes for your Dinner! ... If you have the time and there's a really great recipe you'd love to try (like the ones you can always find here at "The Coffee Shop") then I'd suggest you to try making them ahead of time to make sure they are what you expect and so you can check how long it takes *you* to make it. That way if it doesn't really 'work' for you then it isn't that big of a loss.

9. Only what you enjoy - If you don't like sweet potatoes (like me) or Pumpkin Pie even! Don't include them! Do only what you know everyone will enjoy and don't stress about it! I know they are like "must haves" but ... they really aren't... Maybe with the "time you save" from not making it you can focus on perfecting those dishes you know everyone loves!

10. Wear comfortable Shoes! - LOL! If you have never hosted Thanksgiving or if you've never enjoyed it before and you've decided to do it for the first time or to finally enjoy it too... Then ... Make sure you're wearing comfortable shoes! I know you want to look good but make sure you're comfortable... throw those high heels in the closet, at least while you're prepping and cooking it all... You can put them on when you join everybody too eat, etc.

11. Go to bed early the night before - When I know something is going to happen here at home (holiday/party/people over, etc.) I try to enjoy a relaxing time the night before and get a good night of sleep to be refreshed in the morning. I enjoy a piece of dessert, watch a funny (nothing stressful) movie or show and then just go to bed.

12. Let people help you! - I have very little ones... But if you have older kids, let them help you! I must
admit I am a very controlling person and I feel like "if I don't do it, it won't be right" but ... if your older kids and/or friends want to help, be specific and tell them what they can do! Prepare ahead of time a list of things that others could do! that are easy but time consuming.  On my first thanksgiving I had my SIL peel the hard eggs for the deviled eggs and my sister I think I had her watch my girls! I can't do it all! And I don't have to! I am sure I am not the only one!

I hope you're taking note on these very simple things that will make sure YOU, THE HOST/HOSTESS, will enjoy a wonderful Thanksgiving as well!

Thanksgiving Made Simple - Tips to make it enjoyable for the hostess too!! - Part I

Hello friends! I haven't forgotten about you! It's just that I've been pretty busy! WIth my girls, with church, cooking and baking! I even participated in a small (but very funny) skit in our "Ladies Bible Study" in church... So I thought I would share a pic with you:

As I said... I will be dedicating my posts to fall! this includes: Soups, Desserts and all fall recipes... But also Thanksgiving... That's an important part of fall... isn't it? I already shared with you my basic Thanksgiving Menu , some ideas for Fall Decorations and even talked to you about fall and shared some beautiful Fall Quotes that I hope have inspired you to embrace autumn, its colors, cooler temperatures and just festive feel to it!

Today I just want to let you know that YOU can do your own Thanksgiving Dinner! Honestly... It is not as hard as it might seem! The most important thing about it is not to aim for perfection but for a good time! have fun cooking! It's about being thankful and sharing with the family so... before I start sharing my recipes for that special Occasion I am going to share with you some of my very own tips for you to enjoy Thanksgiving and not just try to "get it all over with!"

1. Be Thankful! ... But truly thankful! A grateful heart really doesn't find much time to complain! I suggest you to start thinking about those things that you're really thankful for... If you can write 100 items in your list that would be awesome! Exercise thankfulness everyday! Start with it each morning! Honestly most people don't appreciate what they have, take it for granted or feel entitled to it! When actually every perfect gift comes from above! Directly from God.

2. Make a list/Start shopping - I shared my menu with you... You can do the same, plan your menu, create your grocery shopping list, and each week (from now) you can start adding "Thanksgiving Items" to your cart! This not only will help you have everything you need in hand with time, but it will also avoid you a "long time" in the store to buy the stuff for your Dinner, it will be very nice for your pocket too because you will not feel the "expense" all at once. There are things you can buy and store, especially pantry items!

3. Make things ahead! There are things that you can probably prepare ahead of time! Like cookies, which can most of the time be frozen and stay good for even a few weeks! Even pie crusts! You can make the dough, freeze it and then just thaw and roll it out to make the pies one day before "The Big Day"

4. From Scratch? Not necessarily! Yes, we all want to make it all from scratch! I do make my Turkey, Cookies and Pies mostly from Scratch... But... I buy Gravy from jars! Just buy a good quality gravy, according to Serious Eats (Taste Test) the best jarred Gravy is from Heinz and Campbell's was the runner up! You can also buy frozen pie crusts if you want! I mean... any "aid" is valid... you are still MAKING Dinner... you're not killing the turkey either, are you? So... it's ok to have some "help".

5. Create a schedule: Ok... you have done your shopping, you know what you'll bake, you even have some cookies in the freezer, now what? Make a schedule! What needs to go first to the oven? What needs to go later? How many hours is the turkey going to be in the oven? -this depends on the pounds of your turkey- Last time (My first time hosting Thanksgiving) was a total success, I had the ideas and tips from hubby's family and  I wasn't going to try to re-invent the wheel! Here is a chart that will show you the "Turkey Roasting Times" - per pound! (in a preheated oven at 325F)



Now... if you use an "Oven Bag" (which I highly recommend) the baking time will be reduced significantly! For example: A 20-24 pounds Un-stuffed Turkey will bake for 3 to 3 1/2 hours at 350 F. Remember that the internal temperature of a turkey should reach 180 F, when you use an oven bag you don't need to add water or keep basting the bird while baking! You just need to season and add 1 tbsp. of flour to the bag! I season the bird with paprika (this will add a beautiful color because when baking in an oven bag it doesn't get that brownish/reddish color on its own), salt and pepper and just add some fresh herbs in the cavity of the bird! You can rub it with dry thyme too!

Last time when I baked my turkey I got it in the oven at 11 in the morning! You have to remember that you need to allow it to rest for about 45 minutes before carving so the liquids redistribute and the meat is not dry!

You will see! This all seems like a lot of work but I am trying to help you with it! Trust me! You got this! You can do it! It's not that hard! I will be sharing more tips in the following days! For now I will let you chew on all this! Making the Thanksgiving Dinner can not only be enjoyable but also can help you create tons of beautiful memories (and not bitter ones that you just want to forget!)

First Thanksgiving Menu - Let's begin!

Hello everybody, sorry I didn't post yesterday! It's been hectic here, but I do NOT forget about you! I totally remember I mentioned I would share with you ideas, tips, recipes and my whole Thanksgiving Menu to hopefully inspire you with your own Thanksgiving dinner! It might seem like it's early now but I am getting all geared up for it! Thanksgiving last year was the first time for me to host it ... I prepared everything! I was super nervous in the beginning but I had amazing "online" help from Joshua's aunts (his mom's sisters) Sadly, Joshua's mom is no longer among us... but I know she would be proud of me if she could see how far I've come! You have to remember I am a Mexican and we do not celebrate Thanksgiving in Mexico... I had "heard about it" and I had even been to a friend's house who celebrated it across the Border (in Texas), I had also read about the reasons why it is celebrated when I learned how to speak English... in those years I studied about it and loved it all and love it that it's one of the main Holidays in the USA but beyond that I knew nothing about how to put it together...

I had no clue I would one day be married to a "gringo" and live in the USA... I am very blessed to be now part of his family and to be still learning so much from his aunts! Especially Auntie Sally who even shared some of her very special secrets with me (and... due to her trust... those very secrets will remain safe with me... Sorry... I am not in liberty to share!) But don't worry... I will still share awesome and simple recipes that will make your Thanksgiving Dinner a total success!

So... last year... with hubby's aunts help (by e-mail because we moved to Texas and they are all in Wisconsin) I tried to "replicate" their Thanksgiving dinner and keep it as traditional and authentic as if it was them making it... Of course had to adapt some things to our taste and likings (I am sorry... this will sound unforgivable but we don't include sweet potatoes in our Thanksgiving Dinner... we are just not into them!) so today... I will just share the Menu that I used on everybody's places -right on top of their plate- last year!

You will see it's nothing too fancy and hopefully nothing will sound too complicated, I am mostly trying to encourage those who are going to be in charge of hosting their first Thanksgiving and let them know it's ok!!! It's not as hard as it seems... Especially when you just focus on keeping a Thanksgiving attitude and enjoying instead of looking for perfection which might only stress you out!

You can make your own in Word and add some Free Cliparts! Make it your own! For me... This was very meaningful because I was trying to honor Hubby's Aunts... that's why the clipart is about those 3 ladies bringing dinner to our very table!
