10 Easy THM Breakfasts for Moms on the Go

Hello everybody! Today is a whole new day! If you didn't do too good last week or yesterday... just scratch that and take advantage of the new mercy that's available to you TODAY!

I hope you enjoyed my series of menus from last week... I am so happy to see many of you got inspired by them! Thank you for your comments (here on facebook), likes and shares! You are all too kind!

Now... last week I told you I want to put together a menu for Moms that are "on the go" recipes/tips for quick meals/snacks or just things that you can just prepare ahead to enjoy later...

I asked for help from fellow THM bloggers that I know and trust and I am going to share with you today some of those recipes that might help you feel like you don't have to spend "all day/everyday" in the kitchen. Some of these do require work and preparation, but they can be made in those times when you do have the time to be in the kitchen and then just store for when you are on the run.

Today it's all about breakfasts:

We got for you:

1. (S) Salted Caramel Chocolate Covered Strawberry Shake by Cate at The Fabuless Wife I love shakes like this! Packed with protein, just throw it all in the blender and TAKE IT with you! If you have a blender with individual cups like a Ninja you don't even have to worry about transferring your drink to any other container.

Easy Salted Caramel Chocolate Covered Strawberry Shake

2. Or how about you take some time during the weekend and prepare this delicious (E) Sprouted Wheat Cinnamon Scones by Judy at Wonderfully Made and Dearly Loved. She told me these store great and they are delicious! They sure look it!

3. Or try Jennifer's (E) Baked Blueberry Oatmeal from A Home with Purpose, she prepares this, puts it away in the fridge and eats it cold! It sounds yummy, and you're getting your e meals in!

4. You could also try her Warm Chia Porridge Dry Mix, she keeps it on hand and ready to avoid throwing things together in the morning.

5. If you are more of a "cereal in the morning" kind of person, you won't miss that on THM ... You can always get Ezekiel Cereal:

and just have it with unsweetened almond or cashew milk for a perfect "E" and there's almost no preparation involved!

6. If you want you can also make your own cereal, I loved (S) The Nutty Banana Crunch Cereal also from Judy at Wonderfully Made and Dearly Loved, it's a great low carb cereal that you can prepare ahead, store in a glass jar and have it ready when you need it! I would double her recipe, here at home we liked it better with a bit of almond extract instead of banana extract. It really has a great crunch! I love it on its own!

7. You could also just have a slice of Ezekiel Bread toast with 1 tsp. of butter, 1 individual container of Triple Zero Yogurt and 1 cup of berries (I love it with strawberries). This would be an "E"

8.  You can never go wrong with Scrambled Eggs! Whole eggs are always an S (just some quick THM info) And Teresia from Nana's Little Kitchen has a very easy (S) Quick Spinach and Egg Breakfast

9. Leftovers! Yes... have dinner (or lunch) for breakfast! The most important thing you have to do is EAT! Don't skip a meal... Don't stay too long without food in your stomach... just make sure you stay within the appropriate setting (S, E or FP)

10. Fruit... If you go for fruit make sure it's not an abundant amount... Have some protein with it (Extra lean protein) to keep it an E (Fruit is always an E, except berries... those can be used in any setting -up to 1 cup- except for berries up to 1/2 cup if you want to use them in any setting. You can even grab 1/2 a banana and have one of those triple Zero Yogurts. The Chia Pudding from the book is a great breakfast option on the go as well.

I hope this has been helpful for you... Let me know!

Banana Pecan Cake - THM Style

What? Two recipes in a row? Well... I just had this for breakfast and I loved it so much that I knew IMPATIENT ME wouldn't be able to wait another day to share this with all of you... because it is absolutely

A - MAZING!!!

I am a baker.... it's in my nature... my dad is a baker... his family is a family of bakers (and even candy makers) ... So .... joining a "sugar free, regular flour free" eating plan... broke my heart a little bit! What was I to do? I don't enjoy baking with stevia! I want the REAL DEAL! I don't like baking with other flours... If you look back into my blog you'll see what I am talking about... I am a cake baker! I am a sugar lover! It's in my blood (figuratively speaking because thank God sugar is not REALLY/LITERALLY in my blood!) But at least the love for all pastry/baked stuff IS!

Well... of course I had to wait for my palate to adjust ... so if you don't like this cake... TRUST ME... give it some time until your taste buds are detoxed from all the sugar and TRY IT! You'll really like it! It is delicious! and I, the baker, am not embarrassed to admit it!

I am so thankful for the THM style that allows me to be "me" :) Do I prefer the "real deal" when it comes to baking? Absolutely! Nobody will ever make me deny that... BUT... this is sooo good that I can actually feel satisfied with the results.

So... here it is:

Banana Pecan Cake  (S)
(Gluten-free, grain-free, low carb)
(This is a variation of a THM muffin in a mug from the THM Book)

Ingredients:
  • 1 whole egg
  • 1 tbsp. coconut flour  I use this one
  • 3 tbsp. almond flour (I get mine from Trader Joe's or the organic "Simple Truth" one from Kroger)
  • 1/2 tsp.aluminum free baking powder I use this one
  • 1 tbsp. unsalted butter
  • 1 tsp. banana extract
  • 3 tsp. of truvia + 1 doonk* (See note) of pure THM stevia extract (or sweeten to taste)
  • 1 tbsp. chopped pecans
Note: A "doonk" is a measure created by the sisters "Serene and Pearl", it is equal to "a pinch" (or 1/32 of a teaspoon to be more exact)

Directions:

In a microwavable mug mix the whole egg, add the rest of the ingredients (except pecans) and whisk until it's all properly mixed, add pecans and fold in, microwave on high for 1 min. (no longer)

Top with whipped cream (I mix on high 1/4 cup of heavy whipping cream, 1 doonk of pure stevia -or truvia to taste-, 1/2 tsp. vanilla), you can also use FF Reddi Whip instead, sprinkle with some extra chopped pecans if desired.

Enjoy!!!!

NOTE/UPDATE 12/5/2014 - My original recipe called for a mix of 2 tbsp. golden flaxseed meal and 2 tbsp. almond flour (instead of the 1 tbsp. coconut flour and 3 tbsp. almond flour) but I then tweaked it to create the most perfect cake like texture... and I am very pleased with it!!! It is pretty awesome :) I just still wanted you to give you the original amounts in case you find yourself with flaxseed instead of coconut flour or wanting more fiber, you can still use it, it still works (and it's delicious) but not such a cake texture.

Zucchini/Poblano Frittata - Breakfast, Lunch or Dinner

Good day everybody! It is not very common for me to write a post on Saturdays but I couldn't wait any longer to share this recipe with you... If you celebrate Halloween (or if your children came home with bags of candy from school) then you probably gave in to a piece (or more) of candy... Do not let guilt keep you down because that doesn't help at all... Instead... Have a delicious and very satisfying meal that will not only will leave your stomach satisfied but will also give you the boost you need to know YOU CAN DO THIS! And on top of it all... you'll lose weight with the healthy fats that your body craves so much!

So... I present to you my very favorite thing to have for breakfast! But it's so delicious that you can even have it for lunch or dinner:

This is the more "plain" version without the cheddar cheese....

Zucchini/PoblanoFrittata - S

Yield: 1 serving

Ingredients:

  • 1 tsp. of grass fed butter or extra virgin coconut oil
  • 1 small/firm zucchini (grated) (or use 1/2 of a medium one) - for more Mexican flavors you can roast 1-2 poblano peppers (peeled and seeded) and finely chop it, use it instead or along with the zucchini -if you don't like "heat" just use zucchini... it's still amazingly delicious!
  • 2-3 whole eggs (don't be afraid of eggs, they're super healthy for you, if you're still doubtful I highly recommend one of my favorite books: The Good Fat Cookbook )
  • 1 oz. of 1/3 less fat Cream Cheese
  • 2-3 tbsp. of just shredded Cheddar (or mozzarella) cheese, grate it (about 2-3 tbsp.) -optional-
  • Sea salt to taste
  • Seasonings like some garlic or onion powder (optional, I don't use those often)
Note: To learn how to roast peppers in the oven... I shared step by step on my FB Page: here

Directions:
In a bowl place all of the ingredients together -except butter- (make sure you add the cream cheese in small pieces). Whisk or mix with a fork (the cream cheese shouldn't completely incorporate, you should have small clumps of cream cheese floating around, that's part of the deliciousness!!-

Melt butter (or coconut oil) in a small-medium skillet on medium/low heat, put all the ingredients in the pan and cover, for a "crispier/more golden version" increase the heat to medium and flip your frittata half-way through so it cooks well on both sides, for a creamier version (my favorite) just cover with a lid (on medium-low heat) and let it cook all the way through without flipping it (about 4 min). Serve immediately and to make it even more Mexican make sure you accompany it with a couple of slices of avocado, top with a bit more shredded cheddar cheese if desired (remember to not overdo cheese but... I guess once in a while it's not too bad)

Enjoy with a delicious cup of coffee (or a trimmaccino!) and let me know how you liked it.

Here is a picture of the "crispier" version topped with cheddar cheese

Thursday! Sweet Thursday!

Hello everybody! Sorry I didn't post yesterday! It was such a crazy busy day! I had all the good intentions to post, reply, comment and I barely even touched the computer! I had grocery shopping to do, stopped by a friend's house and then I was even running a little late for choir rehearsal but I made it there even a little early! YAY for that! Then I got a very bad headache and came home but couldn't even think of anything to write or even sitting in front of the computer, took two ibuprofen and went to sleep -sigh- ... My head? Much better now, thanks for asking! :)

Today... is a new day and I am sure it will be great! :) It's 6:14 as I type and everyone's sleeping... it's almost time to wake hubby up so he can start his day and let his little light shine out there! .

Remember tomorrow is Coffee Friday! For those who have been wondering about it... well...click here for more info (especially if you'd like to be featured! That would be awesome!) but it's quite simple to just link up! If you mention the word coffee on ANY of your posts of the WEEK (when I say "mention coffee" I literally mean that... if you said something like "I haven't had my coffee yet" or "I need another cup of coffee" or "I went to a coffee shop with friends" or "my toddler just spilled the coffee" in your post ... then... it definitely meets the "coffee requirement" you don't need to think too much about it or write a whole post about coffee (that's fun and fine too but I am just saying that's not required)... so if you randomly mentioned coffee you can join our coffee party... There is a linky tool (by inlinkz) that I use on my Friday posts and you just need to click on that button and fill the blanks with the information of the post you'd like to link (they'll tell you what each blank space is for) so it's quite simple! You don't need to be much of an expert ;) ... Just please remember to add a link back to us within such post! That way more people will know about our party! And a party... to be a good one... needs PEOPLE! :)

You can use this button (within your post) to link back! :)

The Coffee Shop

I just made that button... so it's now 7:27! LOL! It's the longest it's taken me to write a post! And I am not even saying what I meant to say originally... I guess I was going to post some kind of dessert... oh yes... I remember... A muffin recipe!
