A special Birthday!

Today is the birthday of a very dear friend, interestingly, for some reason, my brain decided to never remember her birthday... at least that was the case for many years, until last year "the curse ended" and I could finally remember on the exact day! January 7th!


This friend has been my friend for a long time, we've been friends in the silliness of the teenage years, through the "I like that boy" times and through the "I don't know if I should dye my hair or buy shoes" troubles!  As we grew older our friendship has grown stronger... we've been there for each other forever! She's been my "clothes shopping encourager", my "shoulder to cry on" when I've been sad. Her home has been like mine always! You know? She's been that friend that you just "drop by unannounced" and know "it's ok" we can talk about everything, even things that are "touchy" for each other and even if we ever got upset or anything... things always go back to normal! She sees the good in me and the bad too, we understand each other and I love making her laugh! LOL! it's very funny because I make her laugh so hard that sometimes it's like she's going to cry! She's also my "petite friend" ... so my mom used to say that together we looked like "Snoopy and the little yellow bird" LOL! ... I wonder which one I am! ... Growing up we were "expert parents" we knew it all, we even talked about the things that "we would never let our children do" and now that we have children we laugh at each other when we remember how foolish we actually were! we had no clue! And as our children yell in the background when we talk over the phone we can do nothing but try to comfort each other with an "I understand" LOL!

Ah! My friend! It's awesome having friends like that! I'll never forget the periods of my life that were the hardest... and again... she was there... through the nightmares I went through... she was there... (she is also married to someone that's always been a great friend too... so... they've both been there!) and now that everything is good and wonderful... she is still there! I pray everybody gets to have a friend like this... and in my selfishness I want to wish her MANY, MANY, MANY Happy Birthdays... Because I need my friend for many, many, many more years! Until we're all old and wrinkly and when I make her laugh we even forget what we're laughing about!

Happy Monday, right? at least joyous!

Hello friends! Ready for another Happy Monday? I know life gives us lemons and we can't always make lemonade with them but at least let's not rub those lemons on our eyes! I read something like that in a book once and it's so true... Yes... many times we have bad moments in life... and it's not easy to be laughing all the time... but hey! do we have to keep pondering and dwelling over the bad things that happen? Sometimes we rub those lemons and squeeze their juice into our wounds! Trust me... it's not that easy for me to wish you a Happy Monday right now... I've been dealing with some sad thoughts lately (yes... me... the happy girl! LOL!) I heard the news (totally by mistake) the other day... and they said horrible stuff that left me pretty shaken... I am still sooo disturbed inside of me... but I know I need to either do something about it and move on or just keep those sad thought and stay passive to all this pain... what am I going to do? I still don't know... I know I need to share the Good News of Salvation even more... I haven't been doing that... I need to spend more time praying and reading the Word of God... and at the same time I need to take some action... where to start? With two little ones I feel like my time is pretty consumed... maybe blogging about stuff? hopefully reaching others somehow... I don't know! I am shaken... wondering! and thinking even about adoption.. but is all this pain ever going to end? I have nightmares and fears and I wish I could protect not only my girls more but all children in the world... even from their own parents... ok... I am ranting now... you can probably deduct the news I heard involved children... and abuse... and it sickens me... ok... not a very happy Monday post I guess... what can we do? What can you do? -sigh- Let's try to live better, raise our children better, to care for others, to love one another, to stand for what's right, to not look the other way... to live for God...

Ok ... I know we can't be happy/giggly all the time... we live in a sad world ... people suffering all around us and it would be dumb to just be laughing 24/7 like we don't care... but we can still have joy... in the midst of it... choose to teach our kids better and to enjoy the time we have with them and/or with those we love, choose to have joy because we trust in the One that doesn't change... no matter how crazy this world gets... anyway... sorry for ranting here...I probably didn't make much sense... Thank you for reading!

Roots and Wings!

Good morning everybody! The sheets of my bed got stuck to me so I couldn't  get up earlier! LOL! ... ah! I don't envy mommies that have kids in school... LOL! But I know I will go through that sooner than I'd like to! -sigh- It is a blessing to see our children grow... but it's hard too! Letting go and not only allowing but also ENCOURAGING them to learn more, to explore, to dream!


There is a wonderful quote I read in a great book  "A Mother's Heart by Jean Fleming" that is always in my mind... 

"The best thing parents can do for their children is give them roots and wings."


As moms we have such a big responsibility! I've had "important" jobs before... I had a position of authority in the Company where I used to work... I wore many hats and I thought what I did mattered, what I said mattered... One day one of the managers of said company approached me and said:

 "I know you will not be able to be just at home when you marry, you'll NEED to work, that's who you are"

and I told him:

"If you think this Company is important for me, wait and see how much more important my family will be" ...

 I knew that would be true... but being single and without children I couldn't even begin to imagine how much!... what I do today... dressed in shorts and with my hair up... while apparently I am just washing dishes or cooking meals, when it seems I do something as "un-important" as coloring with my little girls... Now I know that what I am doing will shape lives! As I color, talk and look into my girls' eyes I can see they are absorbing every single word! every attitude I have! And while it's an awesome feeling it's also a scary one! Praise God I am not alone on this! He's given me an amazing hubby who is a great daddy and cares for our girls as much as I do... he takes the time to play Play-Doh with them, let them use his bare back as a canvas while they enjoy turning daddy into their colorful masterpiece with crayons and markers, reads stories to them and helps them memorize Bible verses! I am not alone either because I have God... and  I pray that even the mistakes I make while mothering will not be significant or that I can identify soon enough to try and fix them!

This weekend I read something that really stayed with me:

And I realized how true that is! Many times without even realizing it I know it's my mom or dad's voice what I hear inside of me... Sometimes that's what makes me do or not do things... even if it's not as clear as "would my mom approve of this" I know is there... 

But this can't scare me... this can't make me be overly cautious around me! I have to enjoy it all, be free to have fun with my girls! I know if my priorities are in order ... with God above it all... everything will be ok...

So... Happy Monday! Happy HAPPY Monday to you mom who had to wake up early today to give breakfast and get kids ready for school... I hope you smiled while doing it... and if you didn't... well... you can make it up when they come back ... smile, hug, kiss, play AND PRAY a lot!



Oh... and before I close this post I want to thank my friend Laura from Pruning Princesses for giving me "The Versatile Blogger" Award ... I am so honored... Although I would probably say that in my case it would be more like "The Random Blogger" Award... LOL! ... Thank you Laura, this is so nice... and yes... it made my Monday even happier! If you still haven't checked her blog out... you have too! She is pruning princesses too!

Happy Monday... it definitely is!

How can it be any other way? Yes... today is a Happy Monday... because just like the sun raises every morning... His mercies are new each day! :) Happy Monday! YES....

Meet an artist! Fill your life with color!

Happy Monday Everybody! I usually have to start each week with a good attitude and a very upbeat post! Hopefully spreading the good mood to others and trying to fight the "I hate Mondays" mood that unfortunately goes viral week by week! So ... I thought of a great (and very colorful) way to start our week... and that is by talking to you about someone I really love... a person that I've only known for a brief period of time but I've come to admire deeply.... My very dear friend Adele Bower. She is a kind person, courageous and loving, passionate and with strong faith and with a very young heart!

When I first met her, she was leading a Ladies Bible Study Group, I was instantly drawn to her! and I remember thinking "I hope people can feel like that around me one day" ... She is a great teacher of The Word and not only through her words but with her actions and with the love that just shines through her! I am very thankful for her friendship!

Well... she is also a very talented artist... (isn't it amazing? Some people just get it all! LOL!)  and I just love her art! It's so colorful and... well... why would I even try to describe it? I would just be short of words... let me share some of her artwork with you:

Happy Monday and a Movie opinion

Good Monday everybody! How was your weekend? I enjoyed my mom and sister's visit from Mexico... they arrived on Wednesday night and left yesterday morning... The days passed tooooo fast! But I was very happy to enjoy them for those days!

I also went to a "Sip and See" party for my friend Sheri and her new baby Johanna! We had a lot of fun  welcoming Johanna and here's a picture of me, Johanna and her mommy, my friend Sheri.


Then... yesterday we were going to watch "Machine Gun Preacher" and even when the name already raised some red flags we heard it was a movie based on a true story and that it was supposed to be inspirational and convicting... so we rented it... but let me just say I highly discourage you to get it... My dad used to say "would you eat garbage and justify you ate it because there was 'something good' in the middle of it?" and that movie has a lot of garbage to probably get something good out of it... we couldn't watch past the 4th minute and I think watching 4 minutes is watching too much! It is not worth it.

To get a good message or be convicted of something we don't need to get our minds filled with obscenity and swearing! ... so... I suggest do not watch it!


Now... after the busy days we had things will go back to some normalcy... Although I am getting involved with more things at church... BUT I will try to do what I always do and comment back on your blogs if you comment here! :) Plus I'll try to visit some extra friends that might not comment as often but they are always on my mind too! :)

Remember to start your week with a positive, thankful attitude! Focus on your blessings, count them and Praise the Source of every good gift! ...

"Every good gift and every perfect gift is from above, and comes down from the Father of lights, with whom there is no variation or shadow of turning." James 1:17

In this crazy hectic life it is good to know that there is SOMEONE that never changes! Everybody and everything can change... but He is the same... the One who Was, who Is and who will always BE!

I have some calls to make and things to organize... Laundry to put away and stuff like that...

Happy Monday, Sippy Cups and Chicken Tacos!

 As I do every Monday... Here I am sharing about how HAPPY I AM IT IS MONDAY! ... Yes... I guess I could complain about it and lose focus on the blessings that Mondays represent and I could say:


"ugh! Hubby has to go to work" it's hard to find something else I don't like about Monday actually... but I guess we all have our reasons to dislike it... a little...

But ... Instead I choose to love Mondays and start them with a good attitude because

  1. It's a brand new day God's given me and my family.
  2. His mercies are new each day .... even on Mondays! ;)
  3. Hey! Hubby has a job to go to!!! WOOHOOO!!! Praise God... He provides!
  4. Mondays feel like a clean slate to me! New opportunities... New challenges!

We should focus on what we have... Is it fair to complain about dishes to wash instead of being thankful for the fact that we had FOOD that made those dishes possible?
  
Yesterday... I was washing my girls' sippy cups... and all of a sudden I felt overwhelmed with gratefulness! What a wonderful, blessed moment! I am the mom of two great girls! They have a blessed life, their little mouths drink clean water from those cups! I must say "being a mom" was never in my plans before I had them... I wasn't completely "against being a mommy" but I didn't think I really cared much if I had children or not... I didn't know!!!! It's been such an amazing blessing and the sippy cups reminded me of it!

Fast Chicken Tacos 
(Adapted from Martha Stewart Recipes)




Ingredients

  • 1 1/2 pounds chicken cutlets (about 8) (to reduce time you can use leftover rotisserie chicken, you will need about 1 pound. For my recipe to make rotisserie style chicken click here and skip the steps of cooking the chicken cutlets)
  • 2 tablespoons vegetable oil, such as safflower (only 1 tbsp. if you use rotisserie chicken)
  • 1 teaspoon chili powder (not needed if using rotisserie style chicken)
  • Coarse salt and ground pepper
  • 3 bell peppers (ribs and seeds removed), thinly sliced
  • 1 medium red onion, halved and thinly sliced
  • 4 garlic cloves, thinly sliced
  • 8 flour tortillas (6-inch) - You can use whole wheat if desired.
  • Fresh cilantro leaves, for serving
  • 1/2 cup reduced-fat sour cream, for serving
  • Lime wedges, for serving

Directions

  1. Heat broiler on high (with rack about 4" from heat) Arrange chicken on a baking sheet lined with aluminum foil, rub with 1tbsp. oil. Season with chili powder, salt and pepper. Broil without turning until chicken is opaque throughout (about 6 mins) Remove from oven. Set aside.
  2. On another baking sheet (preferably a rimmed baking sheet) lined with foil, toss peppers, onion, garlic, and remaining tablespoon oil; season with salt and pepper. Broil, tossing occasionally, until vegetables are crisp-tender and slightly charred, 6 to 8 minutes.
  3. Meanwhile, thinly slice chicken crosswise. Heat up a griddle (or a big flat pan on the topstove)   at medium heat, once the pan is hot set the tortillas (as many as you can fit without overlapping much), let tortillas warm up on one side for about 45 seconds, flip and let them warm up for about 1 more minute, flip again and warm up for about 40 more seconds (try to press the tortillas down with a fork if your hands aren't that used to the heat) flip again if necessary, tortillas should start making "hot air bubbles" inside, this means they are warming all the way through. (you can use your microwave or oven to warm up your tortillas, but as a Mexican and expert tortilla warmer -lol- I just shared with you the best way to warm up a tortilla) 
  4. Transfer chicken and pepper mixture to a platter, and serve with tortillas, cilantro, sour cream, and lime wedges.

Happy Monday... I won!!!

 Good morning fellow Monday Lovers ;) ... If you, like me, love Monday and get tired of all the attacks towards it on Fb and everywhere else... You are in the right place... now... If you hate Monday and feel like it shouldn't exist (LOL) let me tell you you are in the right place too... Hopefully we can add some happiness to your day and help you start the week better!

I think finding someone with a good attitude is like finding a red bright cardinal in a gray winter day. - Paloma.

If you face today negatively, from the start... even before the day even begins it might just cause for things to go wrong by itself... or at least for things to seem even worse than they are (not just for you, but also those around you)... I am sorry if you are going through a rough time... there are tragedies indeed that I am not going to deny are too painful to smile... and I am not talking about that... I am talking about hating the start of the week just because we have to go to work (instead of thanking because we have work) or just because we are going to face a person who doesn't like us (instead of thanking for all those who do) ... anyway... Charles Swindoll said it like this:

"The longer I live, the more I realize the impact of attitude on life.

Attitude, to me, is more important than facts. It is more important than the past, than education, than money, than circumstances, than failures, than successes, than what other people think or say or do. It is more important than appearance, giftedness or skill. It will make or break a company... a church... a home.

The remarkable thing is we have a choice every day regarding the attitude we will embrace for that day. We cannot change our past... we cannot change the fact that people will act in a certain way. We cannot change the inevitable. The only thing we can do is play on the one string we have, and that is our attitude... I am convinced that life is 10% what happens to me and 90% how I react to it.

 So... I was happy to come and tell you that even when I had a very bad night (littlest one for some reason decided to cry most of the night... which is very, VERY unlike her) and share with you another Happy Start of the week... but right before I posted I found out I am the lucky winner of a giveaway that Amanda from Serenity Now  hosted. YAY! First time I win a giveaway! So cool! Another blessing, right?

Happy Monday - Flowers and Nectar!

Good morning everybody! Dreading to start the week? Feeling down just from reading everybody's statuses on FB complaining and hating Monday? Well... you are at the right place... it's going to be Monday ALL DAY LONG (lol!) So... we can go through it with a happy, thankful, joyful attitude or hating it and complaining about it (making it worse) ... either way we are (hopefully) going to go through it... if we get through another day I guess that's already a reason in itself to be thankful!

Anything good about Monday for you? I've said it many times... for me it's like a new opportunity (each day is, isn't it?) to do things better... but Monday offers us the feeling of a fresh new start! (why so many dieters wait until Monday to begin? Because of that!)

Something I am happy about today... is... well... the flowers on my table! I got them on Friday but they still look gorgeous! they are so bright and ... yellow! It feels like there is a small sun in my dining room!

And to add some extra sweetness to the day ... let me just ask you a question... have you used Agave Nectar for cooking/baking?

I got a small bottle to try it for the very first time and I am still not sure exactly what to do with it... I know there are instructions in the back of the bottle and  I see that instead of 1 cup of sugar you use 2/3  of a cup of agave nectar in a recipe... but I thought I would ask those who have used it before... which recipes are better with Agave Nectar? and... should I use less liquid to the recipe? I mean... it's a liquid so I am wondering if that affects anything... I know it's healthier (and less caloric) than sugar... so I really want to replace sugar in most of my desserts.... how's the taste? too different?

Happy Monday and a challenge!

Good Monday everyone! It is now starting to become a tradition here at "The Coffee Shop" to begin our Mondays with a happy, positive, grateful attitude, sometimes we are too "whinny" don't you think? And then we wonder why the whole week was so hard! Most times is our attitude that makes it all bad! So... let's stop saying "UGH MONDAY" or "I hate Mondays" and turn it into a Happy Monday... I mean... It's still "going to happen" isn't it? we are still going to have to "go through it" anyway! Plus... think about it! Praise God we still have the chance to be here another Monday!!!! I might be a weird person... but whenever I've "had to" go through something "bad" I've made myself find "something good about it" I've had to make myself find something "enjoyable" because I've realized two things:

1. "If I am still going to go through it, why kick and cry and whine? that just makes it all worse."
2. "I am not the first one nor the last one to "go through this" and if others have been able to go through it then why not me and why not find something good about it?"

And with those thoughts in my mind I have been able to go through "minor things" like Shots, dentists, surgery, headaches, tests in school, etc (I've thought like this since I was 12) and when I learned to stop complaining about the very little things then when bigger things came I wasn't destroyed! (Just a comment! I do not like going through bad things at all either!! nor little! Nor big!). But the sun still rises, the Lord is still with me, others have gone through this (and more) so... can't we do the same about Monday? Can you go this day without complaining? Try it out! I challenge you! It will be like "counting calories" (well... if you are in this blog maybe you are not exactly a "calorie counter") but I challenge you to keep track of yourself and EVERY SINGLE TIME you feel like a complaint is going to come out of your mouth just make a better decision and switch it to a praise, say something you are thankful about, see the good in it or the good that could result from it! This applies for the way we see the "weather, being stuck in traffic, etc" plus... it's just Monday! Come on! We can't live our lifes hating Monday! what a waste of a day! Hopefully there will be many many more Mondays in our lives! So... why not make "the best of them?"

Cold Monday!

Good morning everybody! I hear it is cold in many different places already and here in Texas our mornings have been a little cold too! Right now we are 49F (I know that's not even cold for some people! LOL!) but anyways! I just want to start the week with a Happy Thankful thought! Just like I am trying to do every morning! And praise God for something! And today I just want to praise Him for His creation! Thank God for seasons, changes and for chilly mornings! You, whoever you are, if you are reading this post it means that you have a computer and that makes me assume you have shelter, so I guess we both have something to be thankful for! Don't you think?

And for hot coffee... to make those chilly mornings even more enjoyable!


so... how do you want to start your week? In spite of the circumstances we all have a choice! What are you choosing today?

Go ahead! grab a cup of coffee, hot chocolate or something cold if you want or if you are reading from a place where it is warm right now... and choose a good attitude! Trust me... not only YOU will have a better week but also those around you! Our mood is contagious... what are you spreading?

Great Monday!

 Hello everybody! Ready with your cup of coffee? Ready for a new week?? I know I am... I have a new day to enjoy! New mercy! A new week beginning! A great brand new opportunity to do things better, to love more, to work harder, to praise! ... How is your attitude this Monday? Don't start the week with complaints! Usually we set the pace for how things go for us! If you are going through some problem (because I understand bad things happen) don't isolate yourself... Seek for help... Go out with friends, talk to someone and don't dwell on the past, mistakes or on those things that cause you pain... I am not talking here about "positivism" or "good vibes" I am just saying that there is always something to be thankful for... I am sorry if you are going through hard times! If you are... let us know and we can talk with you... and even pray for you! And if you are not ... then don't "look for the little bad things" in everything! Just give thanks for how blessed you are! Sometimes our own selfishness makes us unhappy! We are so focused on ourselves that we become grumpy, dissatisfied! If we were busy helping someone else not only we would appreciate more what we have and be thankful for it but we would also get the satisfaction of having been there for someone in need... I just want us all to hopefully start our week as good as we possibly can! If you are having a hard time in your job... focus on the fact that you have a job when many people don't.... if you are a mom who is tired with the routine of always cleaning after your kids... just focus on the fact that you HAVE your kids with you! And praise God for it! Praise God for the mess! :) ... I've heard those years fly by! And I as I type I am also saying it to myself! Anyway... ready to start the week? Once again, like last time... I invite you to share something (or things) that you are thankful for today... even simple things:

- For a great weekend with the family (we went to an arboretum and got to see BEAUTIFUL things!)- just look at this:
 
 - Ok... now something else I am thankful for...  I forgot to thaw my meat for lunch yesterday and I knew we would be all starving after the church service and when we got to our apartment the club house had FREE pizza (LOL!) so... no cooking, no cleaning! YAY!
- And last but NOT least for awesome long talks with my hubby!

There is so much more... but I would never end!

Happy Monday!

Good Monday everyone! The week is starting so let's start it right! Let's not begin to whine about it "being Monday" or how much we hate to do this or that... most of the time we are the ones setting the tone for the rest of the week with our attitude! Why not have a grateful/joyful attitude? I know it's hard sometimes.... I know it's easy to complain... besides... everyone else is doing it! right? We don't want to be the "weird ones" who are all happy and pumped up to start a new week! But let's be those "freaks" that are just happy to have a new day to live, thankful to God for giving us a whole new fresh page in our lives to write on! an hey! it comes with NEW MERCY too! So... Let's just be thankful for that and focus on the good instead of the bad... I constantly think that if we spent as much energy and time THANKING for the good things as we do worrying or complaining for the "bad things" in life... we wouldn't really have much time to complain (or maybe we wouldn't even dare to do it!) because we would have a whole new perspective of things! so... anyway... Just mention with me... today ... 3 THINGS (anything) that you are thankful for! Come on! Don't be shy! Even if it's not something "big" or that others might consider "Important" ... Let's do it!

Let me go first: (They don't have to be the things you are MOST THANKFUL FOR IN LIFE... they can just be simple day to day things sometimes you don't even care to thank for but that you acknowledge they make your life... just... better)

  • Spices
  • My vintage coffee cups (we got them at a Christmas gift exchange)
  • Temperature below 100's !

Happy Monday!

Good morning everybody! I hope you all had a great weekend! Let's start the week with happy/thankful thoughts, shall we? Please share with us about a good moment you had last week or something you are looking forward to during the week! anything you are thankful for? I am just very happy and thankful for my weekends lately, I mean.... In our near "past" hubby was working so many hours during the weekend too... and even when he was home he was always exhausted... I felt bad for him but I must say I also was sad we couldn't really enjoy much like a family, our weekends now are SO MUCH FUN just from having him with us!! and he even gives me (mommy) a break from the kids and things around the house! and yesterday hubby and I took a "Sunday nap" together... which we hadn't done in over 3 years (our oldest daughter is over 3 years... LOL!) ... Our little baby was sleeping and our oldest one did really great while we slept (it was actually a 2 hour nap) and she was content and just playing on her own! That was bliss! so... anything you'd like to share about? Remember "The Coffee Shop" is not only to talk about food and coffee (we do talk a lot about it and share recipes BUT it's just a virtual coffee shop, where you can talk about anything as you would with your friends!) ... so... share with us... and have a cup of coffee if you'd like!
