Chocolate Cake with Whipped cream - THM S

Hello everybody! Don't have much time to write a long post today but I've been thinking about sharing this delicious recipe with you for quite a bit now... I owe it to some dear friends who have been asking me for either sugar free or gluten free desserts... This one fits both categories! So ... YOU HAVE TO TRY IT! Devil's Food Cake

Recipe for the cake slightly adapted from: askgeorgie.com

For the cake: (all ingredients should be at room temperature)
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 3/4 tsp baking powder (I use aluminum free)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup Xylitol (or you can use 1/4 cup of xylitol plus 2 tbsp. of THM Sweet blend*)
  • 1/3 cup unsweetened natural cocoa powder
  • 1/2 cup water
  • 2 eggs
  • 1 tsp vanilla extract
*Note: Erythritol and some sugar alcohols can cause discomfort for some people with a sensitive digestive system. Erythritol is an ingredient of THM Sweet blend, I prefer to use Xylitol (made from 100% Natural Birch).


For the whipped cream: (this ingredient should be COLD, really COLD) - if you're not a purist you can just use reddi-whip, I prefer to make my own whipped cream, it's really easy!

  •  1 cup of heavy whipping cream.
  •  1 doonk of pure stevia - add another if necessary to taste- ("doonk" is a THM term, a doonk is the equivaltent of a "pinch" or 1/32 tsp.) - you can also use truvia to taste-
  • 1 tsp. vanilla extract
Directions:

1st. of all place a big mixing bowl and the whisk attachment in the freezer to chill (to prepare the whipped cream)

1. Preheat oven to 350 degrees F. Butter or oil the inside of an 8×8″ or 9×9″ cake pan.

2. In a large mixing bowl, stir together almond flour, coconut flour, baking powder, baking soda, xylitol (or sweeteners of choice, if you use xylitol make sure you grind it so it incorporates better into the batter) and cocoa. Stir with a wire whisk to mix and until lumps disappear.
 
3. In a second bowl, stir together water, eggs and vanilla. Pour into bowl with dry ingredients and stir to mix. Spread in the pan and smooth with a spatula. Bake 15 minutes or until toothpick inserted in center comes out with just a few crumbs.

Cool over wire rack.

Right before serving make the whipped cream:

Place the heavy whipping cream in chilled mixing bowl, add the sweetener and mix on high for a couple of minutes (don't over mix) until it has the right consistency of whipped cream, add vanilla and mix on high for just a couple more seconds.

Serve over cooled squares of chocolate cake... BLISS!

 I felt like a little girl on Christmas morning... so, there it was, the box and my impatience to open it... If you know my family and friends they will tell you that when I am asked for my opinion I will tell the truth... I will say it with love if I know it might hurt but I will still say it... so here goes my review for Torch:

- Shipment/Arrival: Excellent! There was no way the bag could open during the shipping process, it was well protected and safely packed in a cardboard box filled with enough protective packaging materials. It arrived quickly after I ordered.

- Packaging/Appearance: Beautiful! I loved their bag, it looks trendy and clean, keeps the coffee beans fresh and it's easy to understand, it even has a date that tells you exactly when it was roasted (mine was roasted the very day they shipped it! I am not kidding! It was that fresh)





Flavor: I got the SAN FRANCISCO Blend, it was honestly delicious and smooth but it's more for someone who is not a big fan of strong coffee, this blend was silky, very mild and not bitter... I love it for a relaxing night when you don't want a blend that will keep you awake all night. Hubby wasn't crazy about it, he LOVES CRAZY STRONG coffee (no cream, no sugar for him)... But I do recommend this one especially for that person that you want to "get started" into the coffee habit and they haven't gotten into it because they don't like the bitterness of coffee. I would almost dare to say this one has a certain "sweetness" to it.

Trim Healthy Mama - Mexican Style! S, E or FP

When people ask me: "Do you cook Mexican all the time?" I must admit that I don't always know what to say so I usually say "I guess" ... I am a Mexican, born and raised there, so whatever I cook I guess has the "Mexican flare" to it... it doesn't mean that I always cook what American people consider Mexican, it doesn't mean that I am always eating "chimichangas" (which by the way I've never had one) or "burritos" (which, I always considered "American food" growing up), it doesn't mean that I am always making "taco soup" or "taco salad" (I came to know those existed when I moved to the USA... I've never made them, btw, I should try those!) so, I guess that's why I don't know what to respond. I am always cooking rice, chicken, beef, "meatloaf" (pastel de carne), etc. Yes I do make "tostadas and tacos" but I also cook "guisados" (like casserole dishes I guess), pasta, etc... and even when I have indeed introduced other foods that I never ate while growing up in Mexico (like barley, which I LOVE!) and I do use some other seasonings that I never used to before (like Italian seasoning) I guess my food can always be considered "Mexican" because, well... that's what I am.

So... now that I am on the Trim Healthy Mama plan, I've been seeing a lot of dishes and recipes but not many of them entirely "satisfy my Mexican palate", I thought I would cook the "way I know to" just making sure I combine the ingredients the right way, the THM way, to make sure I stay on plan... and I am going to share one of my dishes with you... This one can be easily modified and used as FP, S or E... Here it goes:

Get your own Mexican style placemat here
Chicken with Zucchini THM dish - Mexican style
Original dish is naturally Gluten Free
Yield: Serves 4

Ingredients:

  • 2 big chicken breasts (or 3-4 smaller ones)
  • 1/2 cup of water
  • 1/2 white onion (chopped)
  • 1 big clove of garlic (finely chopped)
  • 1 green bell pepper (chopped, discard the seeds)
  • 3/4 cup tomato sauce (make sure there's no added sugar)
  • 1/2 tsp. cumin
  • 3 zucchinis (cubed) (I even used 2 zucchinis and 1 yellow squash)
  • salt to taste

Directions:
  • Place the chicken, water, onion, garlic and salt in a large skillet, cover with a tight lid and let it cook in medium/low heat until the chicken is cooked through (about 30 mins).
  • Remove the chicken breasts from the skillet, let them cool a little bit, while they cool add the tomato sauce, cumin and bell pepper to the water (add a bit more liquid if necessary, there should be enough sauce up to 1/2" high in the pan).
  • Cover the pan with the lid and let the sauce simmer in low heat while you shred the chicken breasts with two forks (or with your fingers if it's cool enough to handle).
  • Return the shredded chicken to the pan and incorporate the zucchini, cover and let it all cook together until the zucchini is cooked through (about 10 more minutes), taste and add a bit more salt to taste if needed. Serve immediately.

FOR FP:

Serve and top with some 0% Greek yogurt next to a big green salad dressed with some balsamic vinegar. You can sprinkle some fresh chopped cilantro on top of your chicken dish.

FOR S:

You can substitute chicken breast for chicken thighs, you can serve with a side of avocado sprinkled with salt or if you're not a purist you can even eat it in 2 low carb (3 net carb) mission flour tortillas topped with sour cream (Don't forget your avocado), iceberg lettuce and cucumbers are a great accompaniment for these flavors! Make a good side salad.

FOR E:

You can serve it with 1/2 cup cooked brown rice (don't add any oil to it) and even go for 1/4 cup of refried beans (fat free, Rosarita has great fat free beans) to go with it. Hopefully you'll make a side salad as well.

I hope you enjoy this dish as much as my family enjoys it! As you can see... I guess I do cook Mexican all the time, it's awesome to be able to stay on plan.

The heart of the problem!

I heard this quote today on my way home after my walk/talk with my bestie... (in our talks we fix the problems of the world, we laugh, we ... well.. I am not going to go into details but I can tell you that today we even heard an 80's country song) so... during our walk today I had a few moments of "self-discovery" ... I was left thinking about the things I do and say... (oh yes... we go deep!), as soon as I got in the car I heard this "heart" quote and I was so thankful, God always finds ways to let me know He is listening, He cares and He knows of my struggles or shortcomings... I liked the quote so much that I thought I had to share...  The human heart is deceitful indeed, that's what the Bible says... the core, the source of all issues lies within the human heart. Every problem can be traced back to it... Whether it is an addiction, our self-image, etc... when the focus is on self and not the Lord, when we follow the "listen to your heart" advice we fall into the biggest trap! It sounds good to "trust the heart" but the heart is not that cute thing we draw, the heart is not that beautiful Valentine cookie of the picture... the heart is  "...deceitful above all things..." Jer. 17:9 and how could we trust the very thing that gets us in the most trouble? How can we trust the very thing that has failed time after time, generation after geneartion!?

Society tells us to "follow our heart" or "do what we think is right" ... it even sounds like a "new thing", like a "wise thing" but humans have been following that very "modern" concept since the beginning! we find time after time in the Bible, generations that were completely destroyed for "doing what was right in their own eyes", strong men of God completely destroyed for "listening to their heart" and going after the wrong woman, kings leading the people of God after false gods, fathers hurting their children for letting them do as they wanted, battles lost for following "intuition" rather than God's voice....

And yet... we want to "re-write history" and we think this "follow your heart" thing is going to somehow "work for US"

I, like you, will continue to struggle with things... just like everybody else... But today my prayer is that I will listen to God... rather than my heart.  May God continue to transform me where my focus is more and more on Him and less and less on me... less and less on others. May I listen to His voice rather than my own. May I continue to grow as He continues to complete His work in me.

Because I can... Guilt free Pumpkin Muffins!

Good day everyone! I am really excited to report that I have some great healthy desserts to share with you... Now... if you are not on Trim Healthy Mama and do not care about weight loss but only eating healthy, avoiding gluten and sugar, etc... this recipe is for you too... here it goes:

Ah! Fall.. I am ready for you!


Right before going in the oven

Pumpkin Muffins - THM Style (S dessert)
Slightly adapted from: Empowered Sustenance

Ingredients
  • 1/2 cup coconut flour (I like this one )
  • 4 eggs, at room temperature
  • 1/4 cup coconut oil (unsalted butter is good too)
  • 7 Tbs. pumpkin puree (I use Libby's, whatever you use make sure it is unsweetened)
  • 2 Tbs. Real Birch Xylitol -make sure you measure your xylitol, then grind it - xylitol is already granulated but grinding it right before using it helps incorporate it and sweeten evenly. (You can use Honey or Real maple syrup instead if you're not on THM or trying to lose weight)
  • 1 tsp. cinnamon or pumpkin pie spice
  • 1/4 tsp. ground ginger
  • 1 tsp. vanilla extract
  • 1 tsp. apple cider vinegar
  • 1/4 tsp. baking soda
Instructions
  1. Preheat the oven to 350 degrees and lightly grease or line 10 muffin cups.
  2. Stir together the coconut flour and eggs, whisk until there is no dry coconut flour, it should look like a smooth paste. Stir in the coconut oil (or butter), then the pumpkin puree and sweetener of choice (xylitol or honey). Then mix in the spices, cider vinegar and baking soda.
  3. Divide evenly in prepared muffin pan. Bake for about 25-30 minutes, until golden and the top springs back when lightly pressed.
I've been so happy making these! I've been even carrying them with me when having breakfast at church for our Ladies Bible Study! I enjoy them with a cup of coffee knowing that I am still on plan while at the same time enjoying with friends! Bye-bye deprivation! Hello Thanksgiving Dinner! I am ready for you!

Best Work From Home Job ever!

 Hello everybody! As some of you may or may not know a couple of months ago I was looking for "work-from-home" jobs... I was getting quite frustrated because even when I have the skills to land a good paying job as a translator I found that there are sites to get this kind of jobs but everybody in the world can apply to them, sounds great but it ends up making the paying rates really really low (as for some people that live in other countries, working 24 hours for only 10 dollars is an actual good pay but it wasn't what I was needing).

I decided I wouldn't give up in trying to help with the finances here at home, so I went to my closest library and I found all about couponing and THAT is where I found MY new job! It does require time and diligence... but it has been very rewarding... Today I just want to share with you some of the great deals I found... If you're in Texas, those deals apply to you too! I just want to share in case it helps somebody else as much as it has helped me!

So... here's just a few of the great deals you can find at Kroger and they're good through midnight Tuesday, October, 2014

So... look some of the things I got:


I want to help end some of the myths most people have about couponing (myths that I used to believe)... most people think that couponing is just for "junk food" and people who eat healthy 'can't save' any money through couponing... I do try to eat healthy... I can't always afford Organic but I try my very best to eat the best choices within our budget... I would say that "the worst" thing I got this time are those Honey Nut Cheerios that I was not even sure I should get but then I thought it would be ok for a snack because if you've SEEN my girls you might think they don't eat much but if you KNOW them, then you know they eat as much (or sometimes more) than their mommy and daddy! So... I have to fill them up somehow and since we don't do candy here and I haven't baked much I am ok with my decision to buy this for them. If you don't like that, you do not have to buy them of course.

So... let me now explain to you how I purchased this and how much I spent:

For the items mentioned in the list above I paid a total of: $24.49

It's just a matter of looking for the deals! And yes, you can still eat healthy! I also got Bob's Red Mill Pearl Barley on Sale and Organic Carrots 2 lbs. for 1.48, Organic Granny Smith Apples $1.48 (All prices are WITH Kroger Card), etc. So... run to your nearest Kroger and take advantage of these and more deals! You can also search for coupons on the Kroger.com site and load them to your kroger card, I will be providing you with coupons here also!

Yesterday I also went to Randall's! I got a lot and all within my budget! Matching Store Deals with Coupons IS the way to go! Randall's has great sales on Friday that you cannot miss! I will be RUNNING over there again early tomorrow morning! let me just give you an example:

Randall's, right now, has a SALE on the "Crystal Farms Natural Slices of Cheese" for $3.69 ... oh, you think that's an "ok deal?" well... Friday gets JUST PERFECT! you will be able to get 2 of those packaged slices of natural cheese for only 5.00! so ... only $2.50 each! If you buy natural cheese you know it is expensive! So ... this IS indeed a good deal!

I used to always think Randall's was way too pricey ... and IT CAN BE if not looking for coupons/deals (Note: Always check out their meat aisle, you might find amazing things that get a price cut by the manager) ...


Let me just show you my receipt from yesterday:



The original total was 139.60 - Total Savings of 66.73 I saved 48% ... You can go to Randalls.com  and create an account (you'll need a member card from the store) and you can load coupons and discounts directly to your card as well!


See that? ... it was pretty amazing! They even have a deal with some participating items/brands (glade candles, pledge, scrubbing bubbles, lysol, etc.) and if you buy 3 of those (MIX&MATCH) you get $3.00 in savings... and that's already good BUT if on top of that you happen to have your own coupons for each of those items... well... you end up with a lot of great savings! It is REALLY, REALLY COOL!

So... yes... I got a job! And it pays off! It is work indeed! Lots of work! But it makes me very happy when I see my bill go from 140.00 to 70.00 or... like... at CVS... that they have a Sale for Tide for only 5.94, sounds good but 5.94 is too much for me to pay, so ... I had 2.00 cash rewards + a coupon of 2.00 for Tide Detergent... Yes... the result is 1.94... now... that's more like it! Don't you think? Stay tuned for more tips and great deals! Obedience supersedes my rights....


It is Friday and I feel like writing... It's been a bit since my last post... and I've been thinking of "awesome blog posts" (yeah, right) and yet I don't seem to be able to put them into words (so there's no real proof of it!)... But... I guess one of the "consistent" thoughts in my mind has been the following: "Obedience supersedes my freedom of speech"

In this day and age we are becoming all too used to "saying exactly what we think, right in the moment when we think about it" ... With Facebook, Twitter and all the "instant social media" we are all too tempted to just "type away" our thoughts... (And here I am ... you see? doing it again! But bear with me... I've been giving this some thought... at least I've waited a few months to actually say it)... It seems we all have something "too important" to say that will either:

a). Impress everyone
b). Shock everyone
c). Enlighten everyone
d). Get everyone concerned
d). Change someone else's mind


 I do agree that posting things away (and right away) is way too tempting, I've fallen prey to this temptation in more occasions than I care to admit... But I've seen way too many times conflicts arise from our lack of "filtering what we say" (what *I* say).

I think the speed of our fingers has finally caught up with the speed of our tongue... and this "fire from hell" (James 3:6b)  is now at the tip of our fingers as well... burning it all in the name of "I have a right to express myself" ... Do we have a right to express ourselves? Absolutely! (And I praise God for it! I, like all of you, need my space to vent and express my ideas) but does this right nullifies my responsibility to esteem others above myself? I do not think so...

I have been caught up in way too many more than one occasion in uncomfortable circumstances where I've said something that hurt somebody else whether I meant it or not... the tongue is a "world of iniquity that defiles the whole body" (James 3:6a) but now with our phones and computers it is too easy and too quick to  share exactly what we're feeling in the very exact moment we're feeling it, like it is crucial for the world to hear and know exactly what's going on in my head, whatever the consequences, not minding those around us that could be insulted, offended, hurt by our statements or to even get the wrong impression from us (let's admit it... writing things down gives room for a lot of confusion and misunderstandings, the reader in general, will add the tone that he/she thinks in his/her head)... Now... are we going to be able to spare everyone's feelings? Are we always responsible for how people take what we say or how we feel? Of course not... but just setting some filters would be very beneficial... and I am talking for myself! (I've sometimes gone through those filters 'afterwards' and had to delete some of the things I've written, sadly sometimes it's been too late).

And I guess one of the best filters we can use, of course, is from the Word of God:

Philipians 2:1-4 "If there be therefore any consolation in Christ, if any comfort of love, if any fellowship of the Spirit, if any bowels and mercies, Fulfil ye my joy, that ye be like-minded, having the same love, being of one accord, of one mind. Let nothing be done through strife or vainglory; but in lowliness of mind let each esteem other better than themselves. Look not every man on his own things, but every man also on the things of others."


Not everything we write on Fb or twitter has to be of "supreme relevance" of course, we can be fun or silly... making someone smile is not irrelevant... I'm not even saying anything about "not posting baby pictures" (please! Keep 'em coming!) or "food pictures" (hey! I need to take those!) just making sure that in our "freedom of speech" and right to use "our space" online, we don't forget that there's a world watching us... 

So let's not even accept ideas like: "It's MY timeline" "It's MY wall" "It's MY life" ... if we've been bought for a price... if we are not owners of our very lives... can't we give HIM those other little things? aren't they also His?

My Prayer: Lord, it's me again, Paloma, I pray that this message will be read in the way that I intended for it to sound, in love and not in judgment, for I, myself, am guilty of failing to esteem others better than myself way too many times, forgive me if I said anything that doesn't please you and let Your Word that I shared here produce fruit in my heart and in the hearts of those that read it,  "Let the words of my mouth, and the meditation of my heart, be acceptable in thy sight, O Lord, my strength, and my redeemer." (Psalm 19:14)
